Simple Roasted Pieced Chicken

With pasture-raised chicken, the effort to delicious ratio for this recipe is high! It almost seems too simple to be this delicious.

Ingredients

  • 1 whole chicken, cut up into pieces

  • 5 leeks, cut into 1cm slices

  • 1-2 tablespoon olive oil

  • Salt and pepper

  • 1 tablespoon Prairie Pollo poultry mix

  • 1/4 C dry white wine

Preparation

  1. Piece the chicken (following our How to Piece a Chicken post or this video, for example).

  2. Preheat the oven to 400°F.

  3. Spread out the chicken parts on a medium high-sided baking pan and add the leeks to the bottom of the pan.

  4. Drizzle the olive oil and add salt, pepper and Prairie Pollo, and then pour over the white wine.

  5. Place in the oven and cook for 50 minutes, basting 2-3 times, until the skin is crispy and the meat cooked through.

  6. Remove from oven, transfer to a platter and enjoy!
